Arroz seco de pato, pulpo y setas / Dry rice with duck, octopus and mushrooms

          Siempre que visito a mi buen amigo Carles, me toca llevar la casa a cuestas. O eso, o me tengo que conformar con alguna pizza precongelada (lo mejor de todo es que a él le da igual comer una cosa u otra, pero no a mí). Así es que ya me ves cargado con la paella, el rodal, la bombona de gas, las especias, el tomate, el arreglo,... vamos, que conforme estoy saliendo de casa siempre me pregunto: ¿y por qué narices no vienen a comer aquí?. Todo sería más sencillo. Pero, ciertamente, luego merece la pena hacer el arrocito en su jardín, mientras disfrutamos de una buena cerveza. Además, mi amigo es de esas personas agradecidas por cualquier comida. Nunca se queja de nada, claro que en esta ocasión no ha tenido muchos motivos. Otra vuelta de tuerca a los "mar y montaña". Os presento un arroz rotundo. Cocinado sobre caldo base de ave, el pulpo le otorga un especial toque salino al plato. Este arroz va por vosotros, amigos. ¡Gracias por el día!

Ingredientes (para 4 personas):

400gr de arroz extra
1'5 litros de caldo de ave (lo puedes hacer tú, pero yo lo compro ya hecho y me evito engorros)
1 magret o pechuga de pato (con la piel y la carcasa)
200gr de pulpo cocido (mejor de los tentáculos)
100gr setas de temporada (níscalos, boletus edulis,...cualquiera que se te ocurra, pero que sea carnosa)
1 ñora
1 cebolla mediana (o el equivalente congelada, que es lo que yo uso, como ya sabréis mis seguidores)
4 cucharadas soperas de tomate natural triturado
3 cucharaditas de ajo en polvo
1/2 copita de oporto
3 cucharaditas (de café) de pimentón ahumado de la Vera
3 cucharaditas (de café) de cúrcuma
Pimienta negra
Sal
Aceite de oliva

Preparación:

- Corta bien pequeño el magret y salpimenta. Reserva
- Trocea el pulpo cocido del mismo tamaño que el pato. Reserva.
- Troccea las setas de la misma manera. Reserva.
- Hierve durante 30 minutos la carcasa del pato y la ñora con el caldo de ave para potenciar el sabor. Reserva el caldo.
- Calienta aceite en la paella. En este caso cubriremos sólo 1/3 del diámetro, pues el pato va a soltar mucha materia grasa y no queremos nadar en aceite.
- Añade el pato y cocínalo a fuego suave hasta que esté bien hecho. Menguará tremendamente su tamaño. Si nos ha quedado exceso de aceite, retira parte con una cuchara y listo.
- Añade la cebolla cortada en brunoise (cuadraditos, para entendernos) si no la has comprado congelada (venga, decídete y te convencerás). Añade también en este punto las setas. Rehóga todo bien hasta estar pochado.

- Añade en este momento el tomate, el pulpo y el oporto y rehoga todo bien hasta que el tomate haya desaparecido.
- Pon el ajo y el pimentón y dale 5 vueltas a todo.
- Añade ahora el caldo de ave y sube el fuego para que empiece a hervir. Deja hervir todo durante unos 10 minutos a fuego fuerte, rectifica de sal (tendrás que ponerle bastante, pero hazlo poco a poco y acuérdate de dejar el caldo ligeramente salado, sin pasarte) y añade el arroz. Distribuye bien el arroz por todo el recipiente y añade la cúrcuma.

- Cocina a fuego fuerte 10 minutos.

- Baja el fuego y cocina unos 5 minutos más a fuego suave (sin que deje de hervir). Después de esto, quita el fuego del interior de la paella y déjalo 3-4 minutos más sólo con el exterior (así seguimos evaporando caldo y evitamos que se nos queme en el centro).
- Déjalo reposar unos 10 minutos antes de comer.

¡¡!! Si junto al ajo y pimentón pones unos 50gr de foie freso cortado en cuadraditos, le añades más cremosidad y potencia al arroz. Es un ingrediente caro, pero vale la pena tener en el congelador algunos trozos para usarlos de vez en cuando.



Arroz seco de pato, pulpo y setas



          Whenever I visit my good friend Carles, I have to carry whole house. Either that or I have to settle for some frozen pizza (best of all is that he does not care to eat one thing or another, but not me). So you see me loaded with the paella, the stand, the gas bottle, spices, tomato, arrangement, ... hey, when I'm getting out home I always wonder: why do not they come to eat here?. Everything would be easier. But certainly, it is worth cooking in his garden, while enjoying a good beer. Also, my friend is someone grateful for any meal. He never complains about anything, of course in this time he had not many reasons for it. Another twist to the "sea and mountain" rices. I present a resounding rice. Cooked with poultry broth, octopus gives a special saline taste to the dish. This rice is for you, folks. Thank you for the day!

Ingredients (servings 4):

Extra rice 350g
1 liter chicken stock (you can do it by yourself, but if you buy it is easier)

1 magret or duck breast (skin and bone)
200g of cooked octopus (tentacles best)
100g wild mushrooms (chanterelles, boletus edulis, ... anyone you want, but it has to be fleshy)
1 medium onion (or equivalent frozen, which is what I use, as my fan know)
4 tbsp crushed tomato

1/2 cup of oporto wine
3 teaspoons garlic powder
3 teaspoons (coffee) smoked paprika
3 teaspoons (coffee) turmeric
Black pepper
Salt
Olive oil

Method:

- Cut the duck breast into small pieces. Add salt and pepper. Reserve it.
- Chop the octopus cooked (the same size as the duck). Reserve it.
- Chop the mushrooms in the same manner. Reserve it.
- Boil for 30 minutes the duck bones with the chicken stock to add flavor. Reserve the broth.
- Heat oil in paella saucepan. In this case we will cover only 1/3 the diameter, because the duck will drop a lot of fat and do not want to swim in oil.
- Add the duck and cook over low heat until it will be well done. If we are excess oil, remove part of it with a spoon.
- Add the onion cut into brunoise (small squares) if you have not purchased frozen (come on, make up your mind and you will be convinced). Also added at this point the mushrooms. Sauté until they will be soft.
- Now, add the tomato, octopus and oporto and fry everything until the tomato is gone.
- Put the garlic and paprika and give 5 turns around.
- Now add the chicken stock and turn up the fire to boil. Boil it for 10 minutes over high heat, add salt to taste (you have to put a lot, but do it slowly; broth has to be slightly salty) and add the rice. Distribute the rice throughout the bowl and add the turmeric.
- Cook over high heat 10 minutes.
- Reduce heat and cook about 5 minutes over low heat (without stopping boil). After this, remove the fire from inside of the pan and leave only 3-4 minutes with the outside fire (avoid burning in the center).
- Let stand 10 minutes before eating.


 !! If you add 50g of diced raw foie-grass with garlic and paprika, you get an extracreamy taste. It is an expensive ingredient, but it worths to have some pieces in the freezer in order to use it from time to time.
