Mi yayo Vicente / My grandfather Vicente
Admisión, Compresión, Explosión y Escape (estooooo, qué iba a decirte yo...).
¡Hasta siempre, Sultán!
Today is a black day. Today my grandfather has gone from our side. As a good friend of mine said , you lost a grandfather but win an angel for life (that is now my consolation). The truth is that I am who I am because of him (except in the cooking, where we only shared that we like good meals). I have the honor of being his sentimental heir, so I feel immensely lucky. As my mother, my name should have been Vincente, and not Luis. I was born shortly after his father's death, Rigoberto (Roberto for all of us), and I have always been for my mother the reincarnation of his grandfather Roberto. Surely that's why I've always felt so close to my grandfather, his son after all. And there's nothing that remember me my grandfather, culinary speaking, as the gin martini, accompanied by a plate of freshly roasted almonds. The first memory I have of this dish is at a restaurant in Puebla de Farnals, called "La Gran Paella", where my grandfather used to order a paella on Sundays. It was there where he enjoyed this appetizer while we waited to deliver it. I always carried with him to that place in his old Ford Fiesta 1.1 Guia, with which taught me to shift gears and instructed me in basic notions of mechanics (my grandpa was a motor mechanic and was there when began my passion for them, so much that it was my university education). That is why that will be, from now, my favorite snack, so he's always with me. Sure we take one together again someday. Intake, compression, explosion and Escape.
Farewell, Sultan!

Cómo cocinar el arroz / How to cook rice

Many years ago I heard a good chef that rice was an star ingredient in the whole world cooking. And
when your cooking experience does not go beyond the paella or white
rice, it isn't an affirmation to be taken seriously. But
as I've gotten older in cooking, I have discovered a vast culinary
universe where everything is possible, provided with this cereal as a
protagonist. Rice for Spanish is like pasta to Italians, and we cook it in endless ways. It supports anything, everything depends on the commensal's taste. I
will not speak in this post of different types of rice, that will be done
in a monograph inside "star ingredient" section. Today I want to show you how to make a good rice whatever the accompanying ingredient will be. I distinguish 3 main ways to serve rice: brothy, dry and creamy (wich is a texture halfway between the first one and second one). From the 18 minutes boiling the rice, all depends on the amount of stock we want left at the end of this time. And
do not be fooled, rice extra type (the most common and usually the
cheapest) is perfect for any type of rice that you cook, so don't
spend too much money in expensives rices. Everything is based on the control of the rice cooking process.
Brothy rice: At the end of rice cooking we should have broth in a variable proportion, normally should be 2 parts of rice against 1 part of broth (each tablespoon should have 2/3 rice and 1 of broth). Rice should predominate in each tablespoon. Don't forget that the dish is rice, not a soup. To help keeping the rice "al dente" it's a good idea to fry it before adding the stock (for about 5 minutes over medium heat). Finally, after all, it's the same process that we make with meat before boiling in order to prevent release juices and get dry. In the case of rice, the process blocks starch go out of the grain, and it keeps firm longer. The brothy rice will be done in saucepan over medium heat and covered to prevent evaporation as much as possible. The water-rice ratio is not less than 4-1. Due to the fact that we will not evaporate too much water, we can give the salt as soon as broth is boiling. You must stop cooking after 15 minutes boiling rice. As broth is remaining in the pan, waste heat from the container will be enough to finish the perfect cooking point. If you turn it off after 20 minutes, rice will open easily and will become soft, not "al dente".
Sticky rice: This rice is cooked basically like the brothy one, but we can use a pot or wok bowl, because we can evaporate more quantity of broth. Indeed, it should evaporate most of the broth to give a creamy touch to this type of rice, but finally you must have something more creamy broth than "risotto" has. Sticky rice is the most difficult one to achieve, especially because it must be eaten as soon as it's cooked , it can not wait or it will miss out the little stock that remains with the residual heat. The water-rice ratio will be 3'5-1. Like brothy rice, you must put the fire out after 15 minutes of cooking and trust that your guests are ready to taste it.
Dry rice: This type of rice must be cooked in a "paella" pan in order to promote the evaporation of the broth. Unlike the others, you don't need to fry the rice before adding the broth, it is assumed that we will have no stock to continue cooking the rice when they pass 18 minutes. I prefer to cook in this time (not 20 minutes) because the little steam while still is resting is enough to finish the cooking and give the perfect point. The water-rice ratio will be 2'5-1 (even 3-1) if we consider that we cook in paella pan, with large evaporation surface of the broth. A great trick is the ridge. Adding rice to the broth, you must generate a ridge in the length of a diameter. This ridge should extend the broth about 1 finger width. After that, spread the rice throughout the vessel so that it is homogeneous. The rice should be cooked over high heat 10 minutes, 5 minutes over medium heat 3 minutes only with the external fire, avoiding heat points in the center of the pan. The salt point has to be done at the end of the first 10 minutes. For the traditional Paella you must boil the both about 45 minutes before add rice, so the ratio will be 4.5-1.
Rotundamente sencillo, sencillamente espectacular.
This Easter I have been fortunate to share several days with one of those people with whom you know you're destined to spend great moments. This is a fighter who left his native Italy to look for a job away from home. And like a good Italian, has great gifts for the kitchen to the traditional kitchen and home, the loaf of bread and baking, through endless handmade pasta. It's amazing the amount of gastronomic resources that have our neighbors, not without reason have been able to conquer the world with something as simple as pizza or pasta. As my good friend says, the Italians are like cockroaches, they are everywhere and always survive. A simple and unequivocal menu combined with brave and enterprising spirit are certainly a perfect combination. Maybe we should take note. I attached a photo of the preparation of one of the dinnings based on pizza and focaccia cooked in wood oven. Absolutely simple, simply spectacular.
